Rösti & Geschnetzeltes

This is the recipe for my version Rösti ロエシティ, Zürcher ズウリチェル Geschnetzeltes ゲチェネズェテス with Carrots.

Rösti

In Swiss-German, this means roasted.

Ingredients

(4 persons)

  • 6 potatoes ジャガイモ
  • Butter ブタ
  • Salt
  • Pepper

Preparation

Ideally, the potatoes for the Rösti are cooked the day before (actually, they are leftovers).

  1. Boil the potatoes with the skin
  2. When the potatoes are cooked cool them down and peel them
  3. Grate the potatoes into small elements
  4. Prepare a frying pan with some butter, low heat
  5. When the butter has melted add the potatoes
  6. Add a nut of butter
  7. Build a cover with some aluminium foil, put some heavy plate on top of it. The potatoes must be compressed.
  8. When it smells a little bit grilled, turn the potato cake using a plate, add butter on both sides.
  9. Add salt and pepper
  10. Wait for the other side to be grilled

Röstis are sometimes served with a mirrored egg on top of them – but only if served without meat.

Zürcher Geschnetzeltes


This means cut meat in the art of Zürich.

Ingredient

(4 persons)

  • A big oignon 玉葱
  • 250 g of white mushrooms
  • 250 g of beef meat
  • Cream
  • Beef bouillon
  • Oil (for instance sunflower)
  • White wine (1 cup).
  • 1 Pot of cream
  • Salt
  • Pepper
  • Parsley (for decoration)

Preparation

Zürcher Geschnetzeltes

  1. Clean and cut the mushrooms into slices
  2. Peel and cut the oignons in small bits
  3. Cut the meat in small bits
  4. Heat some oil in a frying pan medium heat
  5. Cook the oignons until they are transparent, put them aside
  6. Grill the meat until it is not red anymore
  7. Add the oignons
  8. Add the mushrooms
  9. Add the white wine
  10. Add two or three cubes of bouillon
  11. Cover and let the dish cook
  12. Before serving add a pot of cream
  13. Add some hacked Parsley for decoration

Boiled Carrots with Carvi

Ingredients

  • 3 Big carrots
  • Vegetable bouillon
  • Carvi seeds, cumin can be used as a replacement.
  • Olive oil

Preparation

  1. Peel and cut the carrot into small cubes
  2. Prepare a pot with some olive oil, medium heat
  3. When the oil is hot, put in the carrots, cook them until their side are slightly yellow.
  4. Add the cumin seeds
  5. Add cup of water and the vegetable bouillon
  6. Cover and let it cook until the carrots are soft

  2. Funny, I did a Zürcher Geschnetzeltes too when I was in Japan. It must be something with the Swiss… I also made spaghetti carbonara, which turned out to be pretty expensive given that parmesan cheese is quite rare and costly in Japan!

  3. I’ve made a variant of the Rösti recipe for supper tonight, called “Rösti bernois” (your aluminum cover technique worked great). It has meat in it so it can be served as the main dish. Also, I’ve replaced in the recipe pork with beef and butter with margarine…
